Turkey & Wild Rice Soup
You did it! You’re on the other side of yet another major holiday. You cooked. You indulged. You dove in head-first and embraced the spirit of the season – and now you’re ready to turn the page on Thanksgiving 2020. Except, if you’re anything like us, it’s likely that the Ghost of Thanksgiving past is now very much a part of your present and your future. Yep – welcome to “Leftover City,” folks. Oof. But don’t fret! Our leading lady, Jo Marie Scaglia, has the *perfect* recipe to make use of that leftover Thanksgiving turkey. We ain’t afraid of no ghost, right?! Turkey & Wild Rice Soup
Broth Ingredients
Excess turkey from carcass
1 large onion, roughly chopped
2 large carrots, roughly chopped
3 stalks of celery, roughly chopped
Six quarts of water
1 tablespoon fresh thyme
1 tablespoon fresh rosemary
1 tablespoon fresh parsley
3 cloves of garlic, roughly chopped
2 tablespoons apple cider vinegar
Soup Ingredients
3 tablespoons butter of avocado oil
1 large onion, diced
3 large carrots, diced
3 celery sticks, diced
2 tablespoons of gluten-free flour (optional)
3 garlic cloves, minced
1 teaspoon salt
1 teaspoon pepper
3 quarts of turkey bone broth (from recipe above)
1 cup of wild rice
2 to 3 cups of leftover turkey meat
2 cups of English frozen peas
Broth Instructions
Put leftover turkey, water, vinegar, veggies and herbs in a stock pot and bring the pot to a boil.
Let simmer for 5 hours on medium-low heat.
Once simmer is complete, strain all solids from the broth and set aside.
Soup Instructions
In a large pot, add butter or avocado oil, onions, carrots, celery and garlic. Cook until onions are translucent.
If using gluten-free flour, add 2 tablespoons to the pot, simmer and cover for 30 minutes.
Uncover the pot and add broth, salt, pepper, herbs, wild rice and turkey meat. Simmer uncovered for 45 minutes or until rice is cooked.
Add salt and pepper to taste, or add additional broth if needed.
PRO-TIP: Do like “Coco” did (Jo Marie’s Mom) and add a little parmesan cheese on top when serving!
